I hope everyone is staying healthy during this COVID-19 pandemic.
I have been eating a lot of immune-boosting nutritious foods to maintaining optimal health, both physically and psychologically. I would like to introduce one of my favorite recipe "fried rice with burdock root and turmeric."
I used burdock root because I love it! Burdock root is a very popular vegetable in Japan and is called "gobo" in Japanese. Burdock root is high in fibers and has anti-inflammatory, anti-virus, and anti-cancer effects and purifies our blood. Also It is a natural diuretic, so if you are dehydrated, please do not drink too much burdock tea.

Fried rice with burdock root & turmeric
Servings: 2
Ingredients:
3 cups cooked brown rice (or white rice)
1 teaspoon minced garlic
1 teaspoon minced ginger
3/4 cup minced burdock root
1/4 cup minced carrot 2 cup baby spinach 1/4 cup chopped green scallion
1 teaspoon soy sauce or tamari shoyu 1/2 teaspoon turmeric powder 1/2 - 1 teaspoon curry powder Olive oil Salt & white pepper
Directions:
1. Heat 1 Tablespoon of the olive oil in a large skillet over medium-high heat. Add garlic and ginger and stir-fry for 1 minute. Add burdock roots and season with salt and white pepper, stir-frying for 1 minute. Add carrot and cook for a few minutes.

2. Add spinach and a bit of salt, and stir-fry for 30 seconds to 1 minute. Add the soy sauce, 1 Tablespoon of olive oil and brown rice and stir-fry for 3 minutes. Add turmeric powder and curry powder and mixed well.


3. Add green scallion and stir-fry for 2 minutes. Serve immediately.
