Boost Your Immunity with Fried Rice Featuring Burdock Root and Turmeric

Staying healthy is on all of our minds, and nourishing our bodies plays a vital role. Today, I'm bringing a taste of Japan to your kitchen with my "Fried Rice with Burdock Root and Turmeric." In Japan, burdock root ("gobo") is a beloved vegetable, and for good reason! Beyond its satisfying texture, it's a powerhouse of fiber and offers significant anti-inflammatory, antiviral, and anticancer benefits. It's also known for its blood-purifying qualities. If you're a fan of "gobo" like me, get ready for a flavorful and health-boosting dish.

Ingredients:

3 cups cooked brown or white rice
1 tsp garlic, minced
1 tsp ginger, minced
3/4 cup burdock roots, chopped (small pieces)
1/4 cup carrot, chopped (small pieces)
2 cups baby spinach
1/4 cup green scallions, chopped
1 tsp soy sauce or tamari shoyu
1/2 tsp turmeric powder
1/2 to 1 tsp curry powder
2 tbsp or more olive oil
Sea salt and white or black pepper, taste
Instructions:
1. Warm 1 tablespoon of olive oil in a large skillet over medium-high heat. Introduce the garlic and ginger, stir-frying for 1 minute. Add the burdock roots, seasoning with salt and white pepper, and continue to stir-fry for 1 minute. Incorporate the carrot and cook for several minutes.

2. Add spinach and a bit of salt and stir-fry for 30 seconds to 1 minute. Add the soy sauce, 1 Tablespoon of olive oil, and brown rice and stir-fry for 3 minutes. Add turmeric powder and curry powder and mix well.


3. Add the green scallions and stir-fry for 2 minutes. Serve immediately.
