Purple Sweet Potato & Orange Cake (Gluten-Free)

This cake embodies a natural sweetness and evokes the warmth of cherished childhood memories.

Since childhood, sweet potatoes have been my preferred snack—whether steamed, roasted, or mashed, they consistently provide a comforting warmth. Their earthy sweetness harmonizes perfectly with the bright, citrusy notes of fresh oranges, reminiscent of long, sunny summers and the aroma of freshly peeled fruit.


This cake combines those nostalgic elements into a naturally sweet, gluten-free delight made with purple sweet potatoes, coconut flour, and a touch of orange juice. The outcome is a moist, tender cake featuring a vibrant color and flavor that is both grounding and refreshing.

Ingredients:

<Serves: 9-inch round cake pan>


3 cups mashed purple sweet potato (from about 2–3 medium sweet potatoes)

1/2 fresh orange, thinly sliced (for decorating)

50 ml (3 tbsp + 1 tsp) fresh orange juice

1 tbsp orange zest (from 1 orange)

50 ml coconut oil, melted

3/4 cup coconut sugar

2 large eggs

2/3 cup coconut flour ( If you are not gluten-free, you can use all purpose flour instead of coconut flour)


Preparations:

Pre-heat oven to 350°F (about 180°C)

Grease a 9-inch round cake pan and set aside.


Instructions:

  1. Cut the sweet potatoes and boil them in water until they are fork-tender, approximately 15–20 minutes. Drain the water and remove the skins from the sweet potatoes. Mash them until smooth, then measure out 3 cups.



  1. In a large mixing bowl, whisk together orange juice, coconut oil, coconut sugar, and eggs. Add the mashed sweet potatoes and mix until smooth. Stir in the coconut flour until fully combined.


  1. Incorporate the orange zest thoroughly into the mixture. Transfer the batter into the prepared cake pan. Ensure the orange zest is well mixed. Pour the batter into the prepared pan, smoothing the surface. Arrange sliced oranges on top for decoration.


  1. Bake at 350°F (about 180°C) for 40 minutes, or until the cake is set and a toothpick inserted in the center comes out clean. Let cool completely before slicing.
