Vegan Wine-Infused Milk Cookies

Ever wondered what to do with that last bit of red wine? Try baking it into cookies. These vegan wine cookies are subtly fragrant, with a delicate taste of wine that pairs beautifully with raisins and nuts. The recipe calls for wine-soaked raisins, giving each bite a juicy, flavorful twist. Made with whole wheat flour, plant-based milk, and coconut oil, they’re wholesome, rich, and perfect with a cup of tea or even more wine.
A bit of preparation is required: soak the raisins in wine overnight. You'll enjoy a warm, soft cookie with a slightly crisp edge and a refined touch of red wine. If you don't have or don't use wine, simply use warm water instead. It's elegant, effortless, and perfect for creatively using up leftovers.

Ingredients:

Wine-Soaked Raisins (Prep ahead):
In a jar with a lid, combine:
1 cup raisins
1 cup red wine
Seal and gently shake. Let soak for at least 12 hours, preferably overnight
No-Wine Option:
Soak raisins in warm water for 15 minutes instead, and use 2 tbsp of the soaking water in place of wine.
Dry mixture:
2 cups whole wheat flour
1/2 tsp salt
1 tsp baking powder
1/2 cup wine-soaked raisins, chopped
1/2 cup chopped walnuts
Wet mixture:
3/4 cup coconut sugar (or cane sugar)
1/2 cup coconut oil (softened or gently stirred until smooth)
1/4 cup almond milk (or other plant-based milk)
2 tbsp red wine (from soaked raisins)
Preparations :
Preheat oven to 350℉/180℃
Grease a baking pan with coconut oil
Instructions:
Combine dry ingredients in a medium bowl: flour, salt, and baking powder. Add chopped raisins and walnuts; toss to coat evenly.
In a large bowl, mix wet ingredients: coconut sugar, coconut oil, almond milk, and 2 tbsp red wine. Stir until smooth and creamy.
Add the dry mixture into the wet mixture. Mix gently until just combined, no dry flour should remain.

Scoop dough into 2-inch mounds and place on prepared baking pan, leaving about 1/2 inch between each cookie.
Bake for 17–18 minutes. Remove from oven and let cookies cool on a wire rack.
