Matcha Crepe with apple and persimmon compote


I love to make matcha (green tea powder) crepe - it is easy and delicious.

I usually eat the crepes with sweet azuki beans and vegan whip cream but wanted to try with this apple and persimmon compote... because I had many persimmons from my friend. Persimmons are good with green tea flavor 💚

🍎Apple and persimmon compote🧡

<Servings 2 cups>

- Fuyu persimmons 3

- Fuji apple Large 1

- Butter 1T

- Red wine 50cc

- Raw honey 2T

- A pinch of salt

- Grated ginger 1tsp

- Cinnamon powder 1/2 tsp

- Vanilla extract 1 tsp

<Instructions>

1. Peel and dice persimmons and apples. If they are organic, you don't have to peel them. Grate ginger.

2. On the medium heat, cook the persimmon and apple with butter for 5 minutes. Add wine, salt, honey and simmer for 6-8 minutes. When it boils, add ginger, cinnamon, and vanilla extract. Cook for 20 minutes until apples and persimmons are soft.

Tips: * You can use apple juice or orange juice instead of wine.

🍵Green tea "Matcha" Crepe🍵

<Servings 6~7 crepes>

- Organic all purpose flour 1 cup

- Matcha green tea powder 1.5 tsp

- A pinch of salt

- Butter 2T

- Pure organic cane sugar 2T

- Egg 2

<Instructions>

1. Mix flour, matcha green tea powder, and salt.

2. In the medium bowl, mix butter and sugar until fluffy, Add eggs and mix well. Add and mix flour and green tea powder until batter is smooth.

3. Spray non-stick cooking Avocado spray onto a 8 inch frying pan. Pour about 1/4 cup batter into the pan and cook over medium-low heat. When the crepe is starting to brown lightly, gently lift the crepe off of the pan and flip it over for 15 - 20 seconds on the second side. Remove from heat and stack until ready to serve. ​
