Savory Japanese-Inspired Cumin Roasted Carrots

While marinating carrots in olive oil and soy sauce, I opted to incorporate cumin powder. The outcome was truly delightful. Cumin not only aids digestion but also stimulates bile production from the liver, facilitating the digestion of fats and fat-soluble vitamins. Also, this roasted carrots aren't just a feast for your taste buds. They're nourishing for your skin too. Rich in beta-carotene, which your body converts to vitamin A, carrots help promote cell turnover and maintain healthy skin. The antioxidants in carrots also fight free radicals that can damage skin cells, while the natural oils in cumin provide additional anti-inflammatory benefits. Enjoy this delicious side dish knowing you're supporting your natural glow from the inside out.

Ingredients:

<Serves: 2-3>


320g (11 oz) carrots

1/8 tsp sea salt

2 tbsp olive oil

1 tbsp Japanese soy sauce or tamari shoyu for a gluten-free alternative

A pinch of sea salt

1/4 tsp black pepper

1/8-1/4 tsp cumin powder


Instructions:

1. Preheat the oven to 400°F (190℃).


2. Trim the tops from the carrots. Halve the smaller carrots and quarter the larger ones. Lightly salt the carrots.


3. In a large bowl, combine olive oil, soy sauce, black pepper, and cumin powder. Add the carrots to the mixture and let them marinate for 5-10 minutes.

4. Arrange all ingredients on a large baking pan and roast for 20 minutes.
