Maitake mushrooms possess anti-inflammatory and anticarcinogenic properties. They offer additional advantages such as regulating blood sugar levels, boosting the immune system, managing blood pressure and cholesterol, and promoting digestive health.
For food safety, it is crucial to cook maitake mushrooms. Furthermore, since vitamin D is a fat-soluble vitamin, its absorption is enhanced when consumed with fats or oils.

Ingredients:

Maitake Mushrooms:
2 packages (200g) maitake mushrooms (alternatively, you may use preferred mushrooms such as shiitake or oyster)
2 tbsp olive oil
1/8 tsbp sea salt
Tahini Miso Dressing:
2 tsp white miso or any type of miso
1 tbsp + 1 tsp water
3 tbsp tahini
2 tsp rice vinegar
Optional Garnish:
Aonori flakes (green seaweed flakes) to taste
Instructions:
1. Rinse the maitake mushrooms in a colander under cool running water for 10-20 seconds, then gently pat them dry with a towel.
2. In a large sauté pan, heat olive oil over medium-high heat. Add the maitake mushrooms and season with salt.
3. Cook for 5 minutes on medium-high heat, stirring occasionally, then continue cooking for an additional 2 minutes.

4. Prepare the tahini miso dressing by dissolving the miso in water within a bowl. Incorporate the tahini and vinegar, ensuring the mixture is well combined.
5. Arrange the maitake on a plate and drizzle with the tahini miso dressing. Garnish with aonori flakes.
