Ingredients:
<Servings: 8-inch round cake pan>
: liquid ingredients:
1/ 1/2 cup (12 ounces) Grass-fed butter
3/4 cup pure cane sugar
3 large eggs
2 tsp vanilla extract
2 large apples
1 cup rum raisins
: dry ingredients :
3 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
Preparation:
Soak raisins in rum for at least 30 minutes.
Instructions:
1. Preheat the oven to 325°F. Grease the bottom and sides of the cake pan with butter. Core and slice the apples. Sift the flour, baking powder, baking soda, salt, and cinnamon into a medium bowl.
2. In a medium bowl, cream together butter and sugar. Add the eggs and mix until frothy. Add vanilla extract and mix well.
3. Add the dry ingredients to the liquid ingredients and stir with a wooden spoon to blend. Add apples and raisins and mix until combined.
4. Pour the batter into the prepared pan and smooth the top. Tap the cake pan several times on the counter to eliminate air bubbles from the cake batter. Bake for 1 hour and 10 minutes until a cake tester or toothpick inserted in the center comes out clean. Cool for 10 minutes, and serve warm with ice cream.
