This salad incorporates maitake mushrooms, a Japanese adaptogen recognized for bolstering immune and hormone systems, and mitsuba, a mild herb traditionally utilized to enhance mood and energy, offering both healing properties and a rich umami flavor. Maitake is packed with vitamins C, D, E, antioxidants, amino acids, fiber, and β-glucan, a powerful compound known for its anti-inflammatory and immune-boosting effects. β-glucan also supports digestive health and can help reduce stress and protect against candida overgrowth. Mitsuba, a fragrant Japanese herb, adds a refreshing note while gently helping to balance your mood and boost energy. Marinated Maitake & Mitsuba Salad

Ingredients:

<Servings: 4-6>


1 lb/450g maitake mushrooms, cleaned and torn into bite-sized pieces

1/2 cup mitsuba herbs, use leaves and stems, cut into 1.5"/4cm lengths)

1.5–2 tbsp sesame oil

2 tbsp lemon juice

2 tsp soy sauce or tamari

Sea salt and black pepper, to taste


Instructions:

  1. In a medium bowl, whisk together lemon juice, soy sauce, and black pepper.


  2. In a skillet, heat sesame oil over medium heat. Add maitake mushrooms with a pinch of salt and sauté until tender and lightly golden, about 5 minutes.


  3. While the mushrooms are still warm, toss them in the prepared marinade. Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld.


  4. Just before serving, gently toss in the mitsuba for a bright, herbal finish.
