This gluten-free soda bread effortlessly transforms into a delightful cake. The key to its success is the reaction between baking soda and buttermilk, resulting in a beautifully textured crumb. Ingredients:
<Serves : 9-inch cake pan>
3.5 cups brown rice flour
1/2 cup coconut flour
3 tbsp coconut sugar (or pure cane sugar)
1 tsp baking soda
1/2 tsp kosher salt
1/3 cup cold unsalted butter, cubed
1 3/4 cups cold buttermilk
1 extra-large egg
1 cup dried raisins or currants
Instructions:
1. Preheat the oven to 400°F (200℃). Prepare a pan by greasing it with butter or lining a sheet pan with parchment paper.
2. In a large bowl, mix together brown rice flour, coconut flour, sugar, baking soda, and salt.
3. Add the butter and incorporate it into the flour using clean fingers or a fork until the mixture resembles coarse meal.
4. Stir in the raisins and blend them into the dough.
5. Add the buttermilk and egg to the flour mixture, mixing until the dough begins to come together.
6. Transfer the dough to the cake pan and gently score it into 6-8 wedges.

7. Bake for 45-50 minutes until the cake achieves a golden-brown color.

8. After removing from the oven, place on a baking rack to cool. Serve while warm.
