Tofu & Burdock root Burger with Teriyaki Glaze

This Japanese-inspired tofu and burdock burger is a delicious way to enjoy more plant-based meals without sacrificing flavor or satisfaction. The combination of extra firm tofu and earthy burdock root creates a nourishing, fiber-rich patty with a satisfying texture, lightened with shredded carrot and onion for natural sweetness. Pan-fried until golden and finished with a glossy teriyaki glaze, it’s perfect for lunch, dinner, or even a meal-prep-friendly option.
Burdock root, or gobo in Japanese, has long been valued for its digestive and anti-inflammatory benefits. Paired with protein-rich tofu and a savory-sweet homemade sauce, this dish is both comforting and energizing. Serve it on its own, with rice, or in a bun for a Japanese-style burger twist.

Ingredients:
<Serves: 4>
For the Burgers:
12 oz extra firm tofu, drained and gently pressed
1/2 small onion, chopped
6-inch piece of burdock root (gobo), peeled and chopped
1/2 medium carrot, chopped
1 egg
1/2 cup whole wheat or all-purpose flourAdd more flour or panko if the mixture is too soft
Sea salt and black pepper to taste
1/4 cup sesame oil or light olive oil (or a blend of both) for frying
For the Teriyaki Glaze:
3 tbsp tamari or soy sauce
3 tbsp maple syrup or mirin
1/2 tbsp sake
1 tsp cornstarch + 1 tbsp cold water (to dissolve before adding)
Instructions:
In a food processor, combine tofu, burdock root, carrot, and onion. Pulse until mostly smooth but still textured. Transfer to a mixing bowl.

Add the egg, flour, salt, and pepper. Mix thoroughly until well combined. If the mixture is too wet, add a bit more flour or panko to help it hold together.

Divide the mixture into 4 equal portions and shape into patties.
Heat oil in a large skillet over medium heat. Fry patties for 6–8 minutes on each side or until golden brown and cooked through. Remove and set aside.
Make the teriyaki glaze. In a small saucepan, combine tamari, maple syrup (or mirin), and sake. Bring to a simmer. Dissolve the cornstarch in cold water and stir it into the sauce. Simmer until slightly thickened (1–2 minutes).
Drizzle the warm teriyaki sauce over the burgers. Garnish with chopped green onions, if desired.
