Roasted Carrots with Japanese soy sauce and cumin

Roasted Carrots with Japanese Soy Sauce and Cumin 🥕🧡🥕🧡While marinating carrots with olive oil and soy sauce, I decided to add some cumin powder. The result was quite delightful 🧡. Cumin aids digestion and enhances bile production from the liver, which assists in the digestion of fats and fat-soluble vitamins. Enjoy!

Ingredients:

- 320g (11 oz) carrots

- 1/8 teaspoon sea salt

- 2 tablespoons olive oil

- 1 tablespoon Japanese soy sauce or tamari shoyu for a gluten-free option

- a pinch of salt

- 1/4 teaspoon black pepper

- cumin powder


Instructions:

1. Preheat the oven to 400°F (190℃).

2. Trim the tops off the carrots. Halve the smaller pieces and quarter the larger ones. Toss the carrots with salt.

3. In a large bowl, combine olive oil, soy sauce, black pepper, and cumin powder. Add the carrots and let them marinate for 5-10 minutes.


4. Transfer everything onto a large baking pan and roast for 20 minutes.
