Gluten-free Purple sweet potato & Orange cake

Serving: 9-inch round pan

Preparations:

Pre-heat oven at 350F

Grease the cake pan

Ingredients:

Purple sweet potato, mashed 3 cups

Orange 1/2, sliced

Fresh Orange Juice 50ml

Orange zest 1 Tablespoon

Coconut oil 50ml

Coconut sugar 3/4 cup

2 Eggs

Coconut flour 2/3 cup

Directions:

1. Cut the purple sweet potatoes and boil them until tender. Peel the skin and mash the sweet potatoes.

2. In a large bowl, combine orange juice, coconut oil, coconut sugar, and eggs and mix well. Pour the ingredients into the mashed sweet potatoes. Add coconut flour and mix well.

3. Add orange zest and mix well. Spoon batter into prepared cake pan.

4. Decorate sliced orange and bake at 350 degrees F. for 40 minutes. Cool completely.
