Marinated Chicken Breast in Shiso - donburi (rice bowl)

Hi! Have you heard about shiso leaves? Shiso is a Japanese perilla and is also called "Japanese herb." I can find the shiso leaves in Japanese grocery stores in New York, but my dear friend gave me the shiso leaves this time. The shiso leaves were grown in her garden in Brooklyn! I usually use shiso for sushi or salad but made "Marinated Chicken Breast in Shiso" It is a easy and healthy recipe. I hope you enjoy!

shiso leaf

I usually marinate the chicken first, but this time I marinated chicken breast in shiso before I cook them⇩

<Ingredients : 2 servings >

6 boneless, skinless chicken breast, each about 4 ounces

6 shiso leaves

3 Tbsp Sake (shochu should be ok)

2 Tbsp Soy sauce or Tamari

2 Tbsp Sesame Oil

1 small dried red chili : flakes

<Preparation>

1. Mix the marinade ingredients : sake, soy sauce, sesame oil, and chili flakes in a small bowl.

2. Wrap the chicken with a shiso leaf, and the leaf will cover the entire chicken.

3. Put the chickens in a container and pour the marinade sauce over the chicken. Massage gently to coat and cover the container. Marinate in the refrigerator for 1 hour (at least 30minutes).

4. Heat a grill pan for 1 minute and place the chicken and marinade sauce on the pan. You can add 1-2 Tbsp of sesame oil if the chickens absorb the sauce. Cook for 4-5 minutes per side until cooked through.

I had the marinade sauce after the cooking chickens, I cooked chopped fresh kale in the same pan.

I like to eat the chicken with the rice and nori seaweed. See the pic ⇩
